Soft, spongy, buttery, Lemon Curd Cupcakes are a perfect way to use up a bit of leftover lemon curd. What to do with lemon curd? After you have finished making lemon meringue pie, constructed a beautiful layer cake, topped it on your pancakes and oatmeal and sundaes, added to your fruit trifles, and licked it off a spoon. If there is still a tiny bit left and you feel you can’t eat anymore, put the last bit of it in a basic butter cake recipe and eat it as a cupcake. The best part of it is that, in this form it a subdued, subtle version of itself rather that a big, bold hit of tangy, lemony which is the main reason I personally cannot eat it off a spoon. It feels like a punch in my mouth that I don’t care for. But I do enjoy the lemony brightness when complimented with other balancing flavors. This post has started off as a SEO exercise and I promise I did not mean to do that. What to do with a small amount of leftover lemon curd was what I was searching for when I had 3tbsp of lemon curd sitting in […]
Summer Galettes
Make this super easy dough and keep it in your freezer. When you find yourself with lots of fruits that you got at the farmer’s market, make little galettes or one big mixed fruit tart and enjoy summer in its true lusciousness. I think what I really want to write is “10 tips for great Airbnb living”. I think that it has the potential to become a great post. Once I write it. Once I figure out those 10 tips. Strawberry Swirl Pound Cake (Pound Cakes – Part 3)
I am a recent strawberry convert. I remember I used to hate them. In the mid-western part of India around Bombay, the region where I am originally from, they are so precious and yet so disappointing. They sell it for an exorbitant price and if you are lucky you may find one sweet little strawberry in your pint. Like a lottery ticket. But you are obliged to say they were so good. You paid a high enough price for them to be good. It was the same in Dubai. They looked prettier but that’s it. I don’t remember ever buying strawberries. Ever! Until I met Steve who told me stories about how he worked on a farm as a child picking strawberries and eating most of them. I am not the biggest fan of fruit but picking strawberries at a farm and stuffing mouthfuls sounds like fun. And now I am here and it is berry season. Toronto markets are flooded. Strawberries everywhere! Plump, pretty, red, ready to eat and oh so delicious! While I was thinking of combining Pound cake series with strawberries I came across this gorgeous concoction by Joy the Baker. I tried the roasted strawberries and […]
